On an organic farm in central Egypt, an ancient canal system still diverts the Nile’s waters to irrigate the fields. In the spring, the air is filled with the sweet scent of licorice from the fennel flowers. The smallholder farmers then use a special curved knife to cut the fennel plants down and harvest the seeds by hand.


Exhibiting the desert’s terroir, a unique and slightly salty licorice flavour is complemented by a sharp vegetal sweetness. Fennel is great in a variety of dishes with it’s sweet and delicate flavour. Can also be enjoyed as a digestif tea paired with our True Cinnamon.
