Horseradish Condiment: Our horseradish condiment is made using Alberta horseradish from rich black soil grown at Fifth Gen Gardens. We used organic dairy from Vital Greens Farms and ferment it with buttermilk culture. This take on a classic creamed horseradish is finished with Indonesian Muntok peppercorns for a rounded profile. A perfect pairing with roast beef, steaks or on your favourite sandwich!

In Canada, many of the farmers who understand terroir are often stalled at the processing level, a weak link in our food system. At Lessig Ferments, our goal is to bridge that gap by translating the bounty of our short growing season into artisan products via fermentation and preservation. We use specific methods and choose ingredients at the peak of their season to help preserve nutrients and enhance natural flavours.
